Popcorn Buddhi-style

One of my favorite snacks is this popcorn recipe I learned years ago from a friend.  It’s a great way to incorporate healthy fats (from the ghee and coconut oil), B-12, protein, fiber and folic acid (from the nutritional yeast).  If you love savory snacks like potato chips, this will satisfy your craving in a much healthier way.  Curl up on the couch, put on a great movie and make a big bowl of this for you and your peeps.  They’ll love it!

Ingredients:

1/2 cup organic popping corn (Whole Foods and Trader Joe’s carry it)

Organic cold-pressed coconut oil

Ghee

Nutritional Yeast

Sea Salt

Place the popcorn in a pot (or buy a stove-top popcorn popper like me!)  Drizzle coconut oil and stir until all kernels are well coated.  Place top on pot and turn heat to high until all of the popcorn is popped.  Take off heat immediately so you don’t burn it.  While the popcorn is popping, warm up 1/8 cup of ghee on stove.  Fill a large bowl with a little bit of the popcorn.  Drizzle with some of the ghee, sprinkle nutritional yeast and salt and toss with yeast and salt.  Continue to fill the bowl with layers of popcorn, and then drizzle, sprinkle, toss until you have a giant mountain of the best popcorn you will ever eat.
