Snack Balls

This challenge can really work up an appetite!  Our metabolism is burning on high and we’re feeling a little hungrier throughout the day.  Coree from The Juiciest Fruit’s latest challenge recipe is coming to our rescue.  She shows us how to make two different type of homemade snack balls packed to the gills with protein, good fat and other magical sprinkles.  Throw them in your bag to eat after a workout, yoga class or when you’re on the move during the day.  You’ll feel satiated but not full.  These are great for the kids too and fun to make!

Snack Balls Two Ways

Ingredients for Golden Truffle Balls

1 cup coconut butter (also called coconut mana)
3/4 cup shredded coconut
1 tbs nut milk or water
1 tsp coconut oil (you might need more for consistency)
2 tsp turmeric
1/2 tsp cinnamon
pinch of black pepper
1 tbs of honey (if needed for consistency)

Ingredients for Protein Snack Balls

1 1/2 cups oats
1 cup nut butter
1/4 cup honey
1-2 scoops protein powder
chia, sunflower, hemp and/or flax seeds
cacao or match powder

Make Your Balls

The process is the same for both!  First, get a big bowl, throw all the ingredients in there and massage it all together.  Watch the video for a breakdown of how much or little to put in of the extras.  Second, use your (clean) hands to roll the mash up into little two bite balls.  However, if they fall apart, add more honey.  You can also add more coconut oil in the truffle balls or more nut butter in the protein balls to make them stay in ball form.

Try leaving these out to enjoy room temperature or you might also like them refrigerated. Experiment with the recipes so that you find your perfect consistency and taste.  You can master these on-the-go snacks into your own special and delicious version.  Enjoy!
