Farro and Cherry Tomato Salad

Farro and Cherry Tomato Salad

I fell in love with this dish at a friend’s house a few weeks ago.  I’ve made it for the family and brought it to a party and everyone always asks me how to make it.  If you want to have the best dish at the potluck – bring this!

Ingredients:

1 cup of farro
1/2 red onion diced
2 cloves of garlic diced
1 cup of parsley chopped
1 cup of basil chopped
1 cup of halved kalamata olives
1 cup of halved cherry tomatoes
Feta cheese

Dressing:

1/4 cup red vinegar
1/4 olive oil
1/4 cup of honey
1/4 of balsamic vinegar

Put the farro in 2 1/2 cups of water with the garlic, a handful of chopped red onion and a handful of parsley.  Bring it to a boil and simmer with the top on for 30 minutes.  Let the farro cool completely before tossing with the rest of the ingredients and the dressing.

For a dairy free version – skip the feta
For a sugar free version – skip the honey in the dressing
