Cucumber Mint Sparkler

This week, part of the challenge is to give up alcohol.  If you love having a glass of wine at the end of the day like I do, skip it this week and try the Cucumber Mint Sparkler instead.  It’s light, healthy and refreshing.

Ingredients:

2 cucumbers

2 granny smith apples

3 limes

1 bottle of sparkling water

3 sprigs of mint

Directions:

Juice the cucmber and apple in your juicer and pour over ice into a pitcher.

Squeeze in the juice of the limes.

Muddle up the mint and stir it in.

Add sparkling water to your taste.

Serves about 8 people – garnish with strawberries or lime slices.
