After seeing the trailer for the movie, Raw for 30 Days, we got to thinking that it would be kind of nice to start eating raw more often. What we put into our bodies affects our entire being so why not consume the most nutrient-dense foods in their purest form? One of the easiest ways to do this is by making raw soup. All you need is a high-speed blender like the Vitamix or Blendtec, some of your favorite veggies, and a little creativity. Below is a great recipe that we tweaked from the book Everyday Raw Express by Matthew Kenney.
Ingredients
2 avocados, halved
1 cup watercress
1 cup baby spinach
2 tablespoons chopped parsley
1 tablespoon olive oil
1 teaspoon white miso
2 tablespoons lemon juice
1/4 teaspoon cayenne
3 to 4 cups water or nut milk (stay tuned on how to make your own!)
Lydia’s Organics Raw Italian Crackers
Salt and pepper
Instructions
Blend all ingredients except for half of one avocado in a high-speed blender until smooth. Season with salt and pepper to taste. Dice reserved avocado half and sprinkle crackers to garnish soup. Play with making different versions of the soup by adding diced cucumber, tomato and carrots for more texture.
