Rainbow Salad

Summer is right around the corner and we’re focusing on healthy, quality foods to keep ourselves feeling great! This Buddhi original salad is a complete meal packed with nutrients and delicousness.

Ingredients (serves 6)

2 potatoes

3-4 medium beets

3 carrots

3 eggs

2 tomatoes

2 avocados

1/4 onion

1/4 cup cilantro

2 tbsp Udo’s oil

1 tsp sea salt

Directions

Boil a large pot of water and add the following ingredients whole:  eggs, beets, carrots and potatoes.  Bring the temperature down to medium and continue to boil until vegetables are tender and eggs are hard.  Remove from heat and cool down for a few minutes.  Peel and dice the boiled ingredients and add diced tomatoes, avocados and onion.  Season with oil, salt and garnish with cilantro.  Vary it up by adding cucumber, radishes, and celery.  Enjoy!
