Coco Crunch

I discovered these the other day after I paid like a thousand dollars for a similar version at Wholefoods (this recipe is way better btw).  In just a few minutes you can have yourself the most delicious snack or dessert made from healthy ingredients. I’m in love.

Ingredients

2 cups of dates

1-2 tablespoons of coconut oil (melted)

1-1.5 inch piece of ginger

1 tablespoon of raw, juiced or powdered turmeric

1/2 cup of raw walnuts

1 cup dry, unsweetened, shredded coconut

pinch cardammon

pinch cinnamon

pinch cacao powder

Instructions

Place the dates, ginger, turmeric, cacao, spices and coconut oil in a food processor.  Blend thoroughly until you have a nice, smooth, sticky dough to work with.  Using your hands, roll the dough into one-inch balls.  Cover a pan with the shredded coconut and roll the balls over it until fully covered.  You can gently pat the rolls down into the coconut so they stick easier.  Put in fridge for about thirty minutes and enjoy!

Now if that just isn’t decadent enough for you, dip those balls in homemade chocolate and freeze, for the ice cream version.

Frozen & Chocolate-Covered

Mix about a half cup of melted coconut oil with some cacao power, honey and a tiny bit of cayenne pepper for that extra zest.  Make it to taste and don’t worry about the measurements too much.  After you freeze the coconut balls, take them out and roll them around in the chocolate sauce. Place back in freezer for a few minutes and take a bite into this sweet treat. If you like it, share it.
