This salad is healthy, easy to make and delicious. Kale is loaded with calcium and vitamin B6 (pyridoxine), magnesium, vitamin A, vitamin C, and vitamin K. It is also a good source of copper, potassium, iron, manganese, and phosphorus. Kale is an excellent source of antioxidant vitamins A, C, and K and sulphur-containing phytonutrients. Grapefruit is also jam-packed with Vitamin C and antioxidants.
Ingredients:
Medium sized bunch of Curly (Scots) Kale: de-stem and tear into bite size pieces
Large pink grapefruit “supremed”
Ripe avocado diced
Juice of 2 lemons
1 or 2 tbs of Extra Virgin Olive Oil
1 or 2 tsp of sea salt
Combine lemon juice, olive oil and sea salt. Place kale in a large bowl and pour in olive oil mixture. Wtih clean hands, massage the kale with dressing for several minutes until kale is soft and tender. Toss with grapefruit and avocado and enjoy!
