We love pizza but our bodies are rejecting gluten and dairy…does that mean we have to give it up? NO way! All you need is a little creativity and the desire to find an alternative. The good news is that there are many great food companies out there creating clean, solid products. They are few and far between but we’re lucky they’re around. Try our delicious gluten-free, dairy-free pizza and we’ll guarantee you won’t even notice those ingredients are missing. In fact, whomever eats it will be asking for seconds.
Ingredients (makes 2 small pies)
>1 pack of gluten-free pizza crusts (2 personal pies) – you can also try making your own dough with a wheat substitute such as rice or almond flour.
>5 roma tomatoes
>a few basil leaves
>1 celery stalk
>1 carrot
>1 shallot
>2 garlic cloves
>1/2 red onion
>1/2 red bell pepper
>2 kale leaves
>2 tbsp olive oil
>1 tbsp coconut oil
>Sriracha hot sauce (optional)
>Daiya mozzarella or cheddar-style shreds – the only cheese alternative we’ve found without milk protein (casein). These guys rock!
Making the Sauce
Heat the stove to medium with coconut oil and dice the tomatoes, shallot, garlic, celery, carrot and basil. Cook everything until soft. It will look like a thick tomato sauce when ready.
Making the Pizza
Coat the pies with olive oil and spread the sauce generously over the entire crust. Cut the onion into 1/4 inch circles and arrange them over the pies followed by the kale (cut onto 1 inch slices) and the bell peppers (sliced thinlly). Top with cheese and bake in the oven for 25 minutes or until you’ve reached the desired level of crunchiness. Once the pies are done, top with Sriracha hot sauce and get ready to take a bite of pure awesomeness.
