Deviled Avocado “Eggs”

Deviled Avocado “Eggs”

Thanks to Eric Salisbury for sharing this tasty recipe that plays off the classic deviled eggs.  This version is vegan, gluten-free and much healthier!

Makes 8 Halves. Takes about 6 minutes.

Ingredients (all organic)

 

4 Medium Sized Ripe Avocados (Halved, Peeled, and Pitted)
8 oz. Hummus
1 tbsp Apple Cider Vinegar
1/2 tsp Turmeric
1-1/2 tbsp Yellow Mustard

 

Season to Taste with:
Kala Namak (Black Salt), and
Garlic Powder (or Granules)

 

Choose Your Heat:
Cayenne Pepper (Hot), Black Pepper (Mild), Smoked Spanish Paprika (Mild), or Spicy Red Pepper Flakes (Medium)
Instructions

 

1.  Combine Hummus, Apple Cider Vinegar, Turmeric, and Yellow Mustard in a 10 oz. bowl.
2.  Season your mixture to the desired taste with Kala Namak (Black Salt) and Garlic Powder (or Granules).
**Note: (Kala Namak [Black Salt] will give the recipe the egg taste; If the hummus is already well salted then use less Kala Namak to avoid over salting.) 

 

3. With a tablespoon, add a heaping scoop of the hummus mixture into each avocado half and sprinkle with your pepper of choice: cayenne, paprika, etc.
