Plantains are chock full of fiber, Vitamin C, Vitamin A, Vitamin B-6, iron, magnesium and potassium. Fry them up in some coconut oil for a healthier version of potato chips that will hit the spot when you’re craving something salty and fatty. They are the perfect thing to serve at a BBQ this weekend for the holiday.
Ingredients:
2 or 3 VERY ripe plantains – they should look like old bananas.
Organic Coconut Oil
Maldon Sea Salt (or any type of sea salt you like).
Peel the plantains and slice them at an angle like you would a baguette.
Heat up 3 TBS of coconut oil on medium/high until it’s completely melted.
Place plaintain chips into hot oil, flipping over when the edges turn light brown.
Let cook on other side for 2-3 minutes and then place hot chips on a paper towel.
Sprinkle the finished chips with sea salt and VOILA! You have a delicious snack that you don’t have to feel guilty about.
